Ethiopia Natural is over the top with fruity aromatics! Pronounced blueberry and strawberry flavors are unrelenting throughout the cup. The aftertaste has secondary flavors like chocolate and chai and finishes with hibiscus. It's amazing that so many exotic flavors can come from this coffee cherry which looks more like a raisin when it's drying in the sun.
Deep purple cherries signal that internal sugars are at a maximum and the seeds are ready to harvest. The fruit is gently removed with a slight twisting motion and collected to be taken for cleaning and drying. Entire fields of harvested cherries are allowed to dry and ferment under the heat of the sun. This "Natural Process" allows the fruit sugars to transform yielding pungent aromatics and sweet flavors. We tend to roast this on the lighter side to highlight the inherent wild character. However this coffee definitely has awesome representations in more developed roasts which is why we also blend with it.
